A Birthday Dinner That Passed the 12-Person Test

I went to Darby’s American Cantina last week to celebrate my daughter’s birthday, and they handled our table of 12 without missing a beat. We got great food, great service and a really enjoyable night in downtown Redlands.

Darby’s sits at State and Orange in Historic Downtown Redlands and combines a lively sports-bar atmosphere with a broad menu of burgers, tacos, sandwiches, salads, appetizers and entrées. They also lean heavily into the “cantina” side of the name, with 40 beers on tap and a deep whiskey and spirits selection.

What Stood Out at Our Table
  • The Darbinator — exactly the kind of over-the-top burger the name promises
  • Bacon Wrapped Shrimp — three two-piece skewers served with chipotle honey sauce
  • Blackberry Bourbon Smash — a surprisingly refreshing mix of bourbon, blackberry, lemonade, club soda and mint
  • Service for a party of 12 that stayed attentive and organized even with a large birthday group
  • Downtown Redlands location that makes it easy to turn dinner into a night out around State Street

The menu is big enough that just about everyone can find something, but if you like burgers, The Darbinator is hard to overlook. And the bacon-wrapped shrimp appetizer disappeared quickly at our table. The Blackberry Bourbon Smash was also a nice surprise—bourbon-forward, but light and refreshing enough for a warm evening.

Why It’s Worth a Stop

Good food is one thing. Getting good food and good service with a group of 12 is a better test—and Darby’s delivered on both.

Wait… Apple Valley Actually Had Apple Orchards?

It did—and that is one reason the town’s name makes more sense than many newcomers realize. There are several competing stories about exactly how Apple Valley got its name, but both the Town of Apple Valley and San Bernardino County document the area’s early connection to commercial apple growing.

One of the biggest early growers was Max Ihmsen, publisher of the Los Angeles Examiner, who owned an orchard of about 320 acres. By 1915, his prize-winning apples and pears were helping build the area’s reputation for fruit, and by the 1920s apples were being grown locally in significant quantities.

There is also a great local naming story involving early settler Ursula Poates. The area had ties to the Appleton Land Company, and Poates is credited with joking that apples were being raised locally, but not “by the ton”—so she shortened Appleton to Apple Valley.

The orchard era did not last. The Great Depression, the high cost of pumping irrigation water, weather problems and orchard disease all took a toll. By the 1940s, most commercial orchards had disappeared. In a twist of timing, by the time the U.S. Post Office officially recognized the name Apple Valley in 1949, commercial apple production was nearly gone.

Quick takeaway: Apple Valley’s apple connection was real. The community once had substantial commercial orchards, including a roughly 320-acre operation, but most of the industry vanished before the town entered its postwar growth era.
